Job Duties Include :
Reporting to the Sous Chef or Chef de Cuisine of the department, responsibilities and essential job functions include but are not limited to the following :
- Contributing to menu engineering program
- Staying current on industry / competitive trends and creating strategies for improvement and to maximize Food & Beverage revenue.
- Daily line checks on quality of food prep, tasting food and ensuring proper preventive measure in place
- Take the lead on all guest allergies or dietary restrictions within the department to ensure all items are prepared above standard
- Working on the line / station with culinary team, and assisting where required during operations
- Managing colleagues daily task, delegating task as needed, ensuring everybody is at peak performance
- Lead and inspire colleagues to reach their full potential
- Following up on daily proper food safety standards and ensuring all areas are delegated to be cleaned and all records are maintained up-to-date
- Ensuring proper and adequate levels of food are held and ordered through birchstreet procurement system
- Assist the Chef with weekly schedules based on forecasting & budget using Watson LMS
- Fostering a culture where employees focus on their role of doing whatever it takes to exceed guest expectations while performing multiple functions.
- Actively seeking feedback from employees and guests, following-up and taking action to improve VOG & EES results.
- Developing close and effective working relationships with all supporting departments in particular within Food & Beverage and Stewarding.
- Assist with goal development, and departmental initiatives
- Participating in hotel committee activities like and not restricted to Health and safety, Planet 21, Rouxbe, Apprenticeship program, and etc.
- Assist in corrective disciplinary action forms and documentation as needed
- Assign daily workload to achieve maximum labor and productivity efficiencies
- Completes daily temperature log books and insures FIFO of all received goods.
- Place work orders for items needing repair
- Other duties as assigned
Qualifications
Required experience :
- Red Seal Journeyperson Cook Certification or international equivalency
- Completion of Rouxbe Culinary Foundations level 1 & 2. Receiving certification in both with a grade greater than 90% and 54 months (7,020 hours) experience in relevant workplaces
Your Skills & Qualifications :
- Minimum 2 year’s culinary supervisory / leadership experience preferably in a luxury setting or large kitchen environment
- Completion of Rouxbe Culinary Foundations (Level 1 & 2)
- Red Seal Certificate (Journeyperson’s papers) or recognized international equivalent required
- Valid Safe Food Handling Certification required
- Strong Skills in visual presentation of food, with a familiarity with contemporary serving styles; Attention to detail, accuracy and consistency with recipes and plating
- Experience with Recipe development and innovation
- Possess strong leadership, organization, time management & communication skills
- Works well with others, demonstrates good team spirit with an open mind
- Able to maintain high service levels under pressure
- Proficient in Microsoft windows applications word, excel, and powerpoint
- Able to lift, carry and pull up to 50lbs and able to constantly stand and walk throughout shift
- Able to withstand exposure to kitchen equipment includes large and small ovens, stoves, steam kettles, mixers, sheeter, fryers, rational ovens, steamers, tilt skillets, fridges and freezers as well as blast freezers
