Elements Casino Victoria is on the lookout for a true and passionate leader to join us as Manager, Food & Beverage . The successful incumbent will thrive in a fast paced environment, and lead the Food & Beverage department to success.
We are looking for a leader with a proven track record in providing strategic direction as well as hands-on operational assistance.
This position will be responsible for the coordination of Food & Beverage outlet managers and team members, to ensure operational effectiveness and service excellence.
Under the direction of the General Manager, the Manager, Food & Beverage will be responsible for the overall management and profitability of all services associated with the Food & Beverage operation.

Key Accountabilities
- Providing leadership, direction and mentorship to the Food & Beverage operation
- Developing performance objectives and delivering performance evaluations for direct reports
- Planning, directing and implementing Food & Beverage strategic plans and overall business plans
- Providing direction and guidance to the Sales & Catering team in order to drive sales and profitability of our banquet offerings.
- Maximizing the revenues of the food outlets, while minimizing operating costs
- Preparing and monitoring the annual and long term F&B budgets and forecasts
- Analyzing P&L statements and presenting to the Executive Team with suggestions for improvement
- Promoting and marketing the Food & Beverage business
- Working with the overall operational team in driving Gaming Revenue as it relates to Food & Beverage
- Overseeing the monthly inventory count and managing discrepancies
- Liaising closely with the General Manager to ensure strategic sales goals are exceeded
- Developing and maintaining strong working relationships with all stakeholders
- Ensuring compliance with licensing laws, health and safety and other statutory regulations.
Education and Qualifications
- Minimum 5 years experience in all facets of the Food & Beverage operation including a minimum 2-3 years successful management experience
- Proven experience managing and mentoring a large team
- Experience working with Microsoft suite, and industry specific software programs
- POS Experience
- Track record of driving the profitability of Food & Beverage operations
- A passion for providing the Essential Elements of Excellence Guest Service to our internal and external guest
- Ability to exceed internal and external guest expectations through timely, effective and service oriented communication
- Available to work all shifts including evenings, weekends and holidays
- Serving it Right Certificate required
- Food Safe Level 2 required
- Ability to work in a fast paced, busy environment
- Possess a high level of honesty and integrity
- Ability to successfully obtain a criminal record and credit check through the Gaming Policy and Enforcement Branch (GPEB)
