What you will bedoing :

  • Work closelywith Sous Chefs to ensure the day to day on site operations of thekitchen are operating efficiently
  • Train mentorand lead all cooks below Chef de Partie level on daily duties andrequirements
  • Adhere to standardized recipes andspecifications in order to maintain consistency and ensure allstandards are met
  • Maintains a cleanand organized workstation including fridges / freezerscountertops and stove tops
  • Ensures that stationopening and closing procedures are carried out tostandard
  • Keeps overproduction and food waste toa minimum ensures proper rotation labeling and storing of food inorder to reduce food cost expense
  • Ensures thatall food products are handled stored prepared and served safely inaccordance with hotel and government Food Safetyguidelines
  • Responds positively and ina timely manner to all internal and external guestrequests
  • Develops menu additions with theExecutive Sous Chef
  • Apply proper orderingprocedures in the procurement ofproduct
  • Participates actively in dailybriefings and positively supports the direction of the ExecutiveSous Chef
  • Acts as a liaison between the floorand the kitchen
  • Helps raise the standardswithin the department and bring new conceptsforward

Qualifications :

Yourexperience and skillsinclude :

  • Red SealCertificate (Journeypersons papers) or recognized internationalequivalent
  • 78 years experiencepreferably in a luxury hotel or large kitchenenvironment
  • Safe Food Handling Certificationrequired
  • Certificate or Diploma froma recognized Culinary School anasset
  • Must currently be in orpreviously have held a 1st Cookposition
  • Organized efficient and a teamplayer
  • High standards of cleanliness andgrooming
  • Flexible with regards to shifts andworkstations
  • Completion of Level 1 or 2 FirstAid course is an asset
  • Strong communication andleadership skills
  • Strong experience insauces entremets Garde Manger and Banquetproduction

PhysicalAspects of Position (include but are not limited to) :

  • Constant standing andwalking throughout shift
  • Frequent lifting andcarrying up to 30 lbs
  • Occasional kneelingpushing pulling lifting
  • Occasional ascending ordescending ladders stairs and ramps
  • Constantstanding and walking throughoutshift
