Position Summary :
Under the direction of the Culinary Management Team, the Senior Chef de Partie is devoted to all aspects of food preparation to facilitate the creation of truly spectacular cuisine.
The role of the Senior Chef de Partie is to assist the culinary management team with implementing and maintaining quality standards, while ensuring all kitchen policies, procedures, service, and safety standards are adhered to.
The Senior Chef de Partie will assist with monitoring the daily functions of the culinary department, including providing support, guidance, and training to the culinary team, ending in a positive guest experience.
What will you be doing?
You will be responsible for performing the following tasks to the highest standard :
- Review the daily production sheets and line check lists with the colleagues.
- Prepare your own station and delegate the production of the necessary food items in accordance with standards in a timely and efficient fashion to ensure that there is no interruption to guest service.
- Always leading by example for all colleagues to see the proper food handling, execution, and overall development within the work area.
- Actively participates in training of culinary skills to junior staff and apprentices
- Adhere to standardized recipes and specifications to maintain consistency and ensure all standards are met.
- Keep workstation clean and organized, sweeping, and mopping floors including fridges / freezers, keeping countertops and stove tops clean, organizing dry storage.
- Ensure that station opening and closing procedures are carried out to standard, with completed check lists.
- Ensure that all food products are handled, stored, prepared, and served safely in accordance with hotel and government Food Safety guidelines.
- Have full knowledge of all recipes and menu items, as to what is served with and the cost on the menu.
- Complete other job-related duties as assigned by Executive Chef & Sous Chefs.
What are we looking for?
To successfully fill this role, you should demonstrate the following :
- In-depth skills and knowledge of all kitchen operations
- High school degree or its equivalent
- Certification of Culinary Training
- Minimum 3 years’ experience in a first-class culinary environment
- Minimum 2 years’ experience in a supervisory role in a fast paced, fine dining environment
- Possess strong leadership, organization and relationship skills
- Experience with training, basic financial management and customer service
- Excellent technical knowledge of contemporary cooking styles and ingredients
- Proficient in general computer knowledge
- A true desire to exceed guest expectations in a fast-paced customer service environment
- Capable of producing a consistent product in a timely manner and in a high-pressure environment
- Strong verbal and written communication skills
- Ability to work a flexible schedule including days, evenings, weekends, and holidays
